Toasted nuts…really? I have no idea why this recipe even jumped out to me…either I was having a moment of weakness or I am getting older and can appreciate that I can make these at home rather than go buy them. I have no idea really! But, they are really simple to make, good to eat and easy to give!
Start with 4 Cups Unblanched Almonds
So, I had to look up what unblanched means…I admit it. It means that they still have their skin on. There is an article here if you are interested in more information.
In a large bowl, mix 2 egg whites until frothy. Beat in 6 tsp of vanilla.
Combine 1/3 cup sugar, 1/3 cup brown sugar, 1 tsp salt and 1 tsp ground cinnamon.
Pour in Almonds and gently coat.
Spread almonds out onto a rimmed baking sheet and spread evenly. Use two baking sheets to make sure that the almonds have some room. Bake at 300 degrees for 25 to 30 minutes.
As they bake, they will darken in color and not be glossy anymore. Taste test them in the oven…you will know that they are done cooking when they are crisp; no longer raw and cooked all the way through.
Here they are when they are all done and ready for eating…
